Easter Weekend

It was a very busy weekend, but we had a great time being around each other and with family. It's important to be with the ones you love during the holidays.

On Friday we took Tommy out shopping for a new work wardrobe, I got the chance to get a much needed manicure and pedicure. We all took Bing to the vet for his check up and shots. We had Grams and Pops stay with us for the night.

Saturday was ballet and Gymnastics. We met at home and headed over to Grandpa's to see his new house. What a house!! We can't wait for them to move in the kids can run and run and run!!! We had to go food shopping and then Grams and Pops came over again to spend the night.

Sunday the kids woke up to Easter Eggs hidden over the house. The kids, Tommy, Grams, and Pops dyed eggs while I made Ricotta Pancakes. (So delicious). We then all took a nap and headed over to the Smith's house for Easter. The kids got to hunt for more eggs. I got to play with Little Gehrig, he is so darn sweet and yummy!! We had a great time being around some of our family. We missed the ones that we didn't get to see. Hopefully we'll see EVERYONE soon!!

Orange Ricotta Pancakes
Ingredients
Serves 4
1 3/4 cups (15 ounces) part-skim ricotta cheese
1/3 cup granulated sugar
2 large eggs
2 teaspoons grated orange zest (1 orange)
2/3 cup all-purpose flour
3 tablespoons canola oil
Confectioners' sugar, or maple syrup
